Pita Cheese Crepes
1 1/2 cups unsalted Yogurt cheese, or Ricotta
2 Tbsp. sugar
1/2 Tbsp. grated lemon rind
2 Tbsp. melted butter
6 Pitas
Blend cheese, sugar and lemon rind until smooth. Set aside Square Pita to make 12, 4 inch strips. Preheat oven to 350°, grease small baking sheet. Microwave chips to soften, so they roll without cracking. Spread cheese evenly on one side, roll lengthwise and place on sheet. Coat with butter and bake 15-20 min. Serve warm with syrup.
